1 Premium brioche pre-sliced

80 g vanilla custard

40 g red fruits

60 g caramelised Macadamia nuts

Lemon & orange zest

With the taste of Saint Tropez in its core, this sweet burger offers the smooth sweetness of Tropézienne and custard. A dash of acidity was added through red fruits and lemon & orange zest, while the caramelised Macadamia nuts add an extra crunch to the recipe.

Mise en place

< Max 1 day in advance >

Prepare a traditional vanilla custard.

Prepare a dry caramel sauce. When the colour is golden brown, poor the macadamia nuts in it.


< Max 4 hours in advance >

Defrost the brioche bun (60’ at 22°C).

Preparation

  1. First, slightly toast the inside of both the top and bottom bun.

  2. Build up the sweet burger: begin with the custard cream and decorate with the red fruits and macadamia nuts.

  3. Close the burger and serve immediately!
