This veggie burger captures the beloved flavours of the Mediterranean, perfectly paired with our soft Gourmet Brioche Bun. Grilled aubergine brings a smoky richness, topped with salty, golden-grilled halloumi. Pickled red onions add a punch of flavour and a satisfying crunch.

Make the spicy hummus: blend chickpeas, tahini, garlic, lemon juice, olive oil, and a pinch of salt. Add harissa or chili flakes for a spicy twist. Store in the refrigerator.
Pickle the red onion: slice the red onion into thin rings and marinate for at least a few hours in a mixture of red wine vinegar, sugar, and salt.

Defrost the brioche bun (60’ at 22°C). Grill the aubergine: cut aubergine into slices, brush with olive oil and grill until soft and slightly caramelised.
Start by lightly toasting the inside of both the top and bottom bun. Then, cut the halloumi into slices and grill briefly until golden brown.
Spread the bottom bun with a layer of spicy hummus. After, place the grilled aubergine on top, followed by the grilled halloumi.
Add the pickled red onion for a fresh and spicy touch and finish with fresh herbs or a lettuce of your choice. Close the burger and serve immediately!
