Focaccia with oyster mushrooms and gorgonzola

30 g shallots

3 g garlic

10 g spinach

30 g gorgonzola, crumbled

5 g parsley, chopped

5 g truffle oil

10 g pine nuts

We're here to inspire you with this delicious vegetarian combination of oyster mushrooms, gorgonzola and truffle oil - finished with fresh spinach and parsley. The sandwich is at its best when served oven-fresh, so wait until the last minute to bake the bread. Is that a promise?

Thaw the focaccia as indicated on the packet and bake only at the last minute.

Prepare the oyster mushrooms: tear the oyster mushrooms into strips, cut the shallot into half-moons and crush the garlic. Heat a little olive oil or butter in a frying pan and brown the oyster mushrooms, shallot and garlic. Season with salt and pepper. Top with half the parsley.

Briefly toast the pine nuts in a dry frying pan.

Preparation

  1. Bake the focaccia at the last minute. Open the fully baked, pre-sliced focaccia and drizzle both halves with the truffle oil.

  2. Coat successively with the spinach, oyster mushroom mixture and gorgonzola.

  3. Garnish with the pine nuts, the rest of the parsley and a freshly ground salt and pepper. Put the top slice on.

  4. Serve immediately!
