Smash Burger with onion rings & pickled cucumber

Ingredients (for 1 portion)

1 Brioche bun pre-sliced 85

150 g minced beef (15% fat)

1 cucumber, sliced

1 onion

20 g sugar

10 g corn starch

20 g white wine vinegar

20 g mustard

20 g mayonnaise

2 slices of cheddar

extra: pink peppercorns

Mise en place

Thaw the Brioche Bun as directed on the packet.


< Min 1 hour in advance >

Pickle the cucumber in the white wine vinegar and sugar. Add pink peppercorns to taste.

Preparation

  1. Make the onion rings: dip the onion in the corn starch, tap off the excess and deep fry (or bake in an air fryer/oven).

  2. Make a ball with the mince, place on a hot griddle and smash with a spatula. Flip over and repeat. Season to taste with freshly ground salt and pepper.

  3. Open the Brioche Bun and assemble your sandwich: spread mustard mayonnaise on both halves of your sandwich. Top with the (drained!) cucumber, burger, cheddar and onion rings.

  4. Serve immediately!
